Dr. Serena Love, a researcher in Archaeology at the University of Queensland, collaborated with Blakley for this project. She said:

"Seamus wanted ancient yeast to bake bread with and I want to brew beer with it. I got us access to museum collections and Seamus collected some samples in late July. We've been working on this since May."

The smell of the bread he got from the 4,500-year-old recipe was very peculiar. He explained:

"The crumb is light and airy, especially for a 100% ancient grain loaf. The aroma and flavor are incredible. I'm emotional. It's really different, and you can easily tell even if you're not a bread nerd. This is incredibly exciting, and I'm so amazed that it worked."

Other Experimented

Blackley's accomplishment is impressive, but he was not the first to try something similar. Other scientists before tried preparing food from past civilizations.

In May 2019, for example, some scientists in Israel used yeast from 5,000 years ago to brew beer. The sample came from pottery shards from ancient beer jugs.
